Dinner Rolls Recipe

The one thing we have to have at our family dinners are rolls. Normally we go to the store and buy rolls there. This year, I decided to try my hand at making dinner rolls.

I was rather pleased how they turned out. I probably should have let them rise a bit longer before baking, but that didn’t effect taste. YUM!

Serves: 12
Ingredients
  • 2 to 2¼ cups of flour
  • 1 envelope of fast rising yeast
  • 2 tablespoons of sugar
  • ½ teaspoon salt
  • ½ cup of milk
  • ¼ cup of water
  • 2 tablespoons of butter
Instructions
  1. Mix in a large bowl: ¾ cup of flour, undissolved yeast, sugar and salt.
  2. Heat the milk, water, and butter until it is very warm.
  3. Add the milk mix to the large bowl.
  4. Use your electric mixture with the bread hooks and beat for 2 minutes on medium speed.
  5. Add ¼ cup of flour and beat for another 2 minutes on high speed.
  6. Keep mixing in the remaining flour until it is a soft dough.
  7. Knead on a floured surface for about 8 minutes, or until smooth.
  8. Cover and let the dough rest for 10 minutes.
  9. Divide the dough into 12 parts and roll into balls.
  10. Place them in a 9 inch round pan (greased).
  11. Cover and let them rise in a warm place until they are double in size.
  12. Bake at 375 for 20 minutes.

Chicken Noodle Dinner Recipe

Who doesn’t like some comfort food? Chicken Noodle Dinner is my favorite, but it has to be made with homemade noodles. I think the noodles make the dinner

If you ever go to Bob Evans, this is a close second to their dinner. It is so easy to make!! All you need is a crock pot. I like to serve the Chicken Noodle Dinner over mashed potatoes.

Serves: 6-8
Ingredients
  • 9 cups of Chicken Broth
  • ¾ cup of chopped Carrots
  • ¾ cup of chopped Celery
  • 1 cup chopped onion
  • ½ cup butter
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 pound of boneless, skinless chicken breast
  • 2 batches of noodle (recipe below) or 16 oz of homestyle noodles
Instructions
  1. Put everything inside a large crock pot.
  2. Cook for 7 hours on low or 3 hours on high.
  3. Remove the chicken breast and shred. Return the chicken to the crock pot.
  4. Cook for an addition hour.
Notes
I did not cook the noodles before placing them in the crock pot.

  • 1 cup of Flour
  • 2 Eggs
  • 1 tsp Milk
Instructions
  1. Beat the eggs and add in the milk.
  2. Add the eggs and milk to the flour.
  3. Mix together.
  4. Roll out on a floured countertop and let it dry for 1 hour.
  5. Cut into noodles.
Notes
If noodles are not used in the Chicken Noodle Dinner Recipe, you can cook the noodles in boiling broth for 5 min.

 

Cheddar and Garlic Biscuits Recipe

So the best part about going to Red Lobster is their biscuits. I absolutely love ’em and could make a meal of them. These biscuits are close to the biscuits at Red Lobster and super easy to make.

Ingredients
  • 2 cups of Bisquick
  • ⅔ cup of milk
  • ½ cup of shredded Cheddar cheese
  • ¼ cup of butter
  • ¼ tsp. garlic powder
Instructions
  1. Mix Bisquick, milk, and cheese together until it is a soft dough
  2. Drop the dough by the spoonful on to a cookie sheet
  3. Bake for 8-10 minutes at 450 degrees or until golden brown.
  4. Melt the butter.
  5. Add the garlic powder to the butter.
  6. Once the biscuits are done, brush the butter mix over the top before removing from cookie sheet.
Notes
Tastes best when served warm.

 

Potato Soup Recipe

I love potato soup this time of year. I will share with you my recipe that I have been using for some years now. It is a fairly easy recipe and it only requires one pot to make it.

Serves: 5-6
Ingredients
  • 4 thickly cut slices of bacon
  • 4 leeks, cut thinly
  • 3 14oz cans of chicken broth
  • 3 lbs of potatoes, cubed
  • 8 oz. of shredded cheddar cheese
  • ¾ tsp. salt
  • ½ tsp. black pepper
  • 2 tbs. chopped parsley
Instructions
  1. In a large pot, cook your bacon.
  2. Remove the bacon.
  3. Remove all but a tablespoon of the grease.
  4. Toss the leeks in the pot. Cook until tender, stirring them often.
  5. Add chicken broth, potatoes and bring to a boil.
  6. Cover and cook the potatoes until they are tender.
  7. Remove 2 cups of the potatoes with a slotted spoon.
  8. Place the 2 cups in a food processor along with the cheddar cheese. Puree until it is smooth.
  9. Put the puree back into your pot. Stir constantly until the cheese has melted. (do not boil soup)
  10. Add the salt, pepper and parsley. Crumble bacon on top.

Fall Sugar Cookies Recipe

The leaves are changing and the weather is getting chilly. Fall has arrived! I am not a huge fan of cold weather but I tried to come up with a way to enjoy Fall.

Ingredients
  • 2 cups of Sugar
  • 1 cup of Butter
  • 1 cup of Sour Cream
  • 1 tsp Baking Powder
  • 1 tsp Vanilla
  • 3 eggs (well beaten)
  • 5-6 cups of Flour
  • 1 tsp of Baking Powder
Instructions
  1. Using a stand mixer, cream sugar and butter.
  2. Mix the sour cream and baking soda in a smaller bowl, then mix it in with the sugar and butter.
  3. Add in the vanilla and eggs.
  4. Sift flour and baking soda together and mix it into the mixture slowly.
  5. Chill for 1 hour.
  6. Roll out the dough out and cut into your desired shapes.
  7. Bake at 375 for about 8 minutes. (adjust time as needed)
Notes
I use a stand mixer since the dough gets thick. Should you need to double batch the cookies, DO NOT DO IT! You will burn up the mixer motor. Make 2 different batches to save your mixer.

For the icing, I used Royal Icing.

Ingredients
  • 2 egg whites
  • 1 tsp of lemon juice
  • 2 lbs of powdered sugar (you may not use all of this)
  • gel food coloring
Instructions
  1. Combine the egg whites and lemon juice in a large bowl.
  2. Shift the powder sugar.
  3. Add the the powdered sugar a little at a time to the large bowl. Use your hand mixer with the hooks.
  4. Once you get a fairly stiff icing, you can use this for piping.
  5. For flooding, you just need to add a bit of water to the icing.
  6. Take bits of the icing to mix up the colors you will need in smaller bowls.
Notes
Royal Icing is very forgiving. If it ends up too runny, simply add more powdered sugar. If it is too think, then add more water.

 

Rojo Chicken

Chicken and Turkey is just about the only meat I can eat currently. I am in the middle of second pregnancy and those are the only meats that agree with me. So, when I found this recipe with cheese and Doritos, I could not pass this up.

  • 2 10 oz cans of chunk Chicken
  • 1 pound of Velveeta Cheese
  • 1 can of Rotel Tomatoes
  • 1 can of Cream of Chicken Soup
  • 1 bag of Doritos, Nacho Cheese Flavor, Crushed
Instructions
  1. In a large pot, melt the cheese, rotel, and soup.
  2. Once melted, add the chicken and about half the bag of Doritos (you need to save some for the top)
  3. Place the mixture 9x13 pan and top with the rest of the Doritos.
  4. Bake at 350 for about 20 minutes or until hot.

 

Chicken Parmesan Recipe

Since I had all that yummy Marinara Sauce, I thought I would try and make Chicken Parmesan with it. Oh boy was it good!

Ingredients
  • 5 large chicken breast
  • 1 packet of Shake 'n Bake
  • 2 cups marinara sauce
  • Parmesan Cheese
  • 1 lb of Penne noodles
Instructions
  1. Heat some olive oil in a skillet.
  2. Cover your chicken breasts with the Shake 'n Bake.
  3. Place the chicken in the skillet for just a few minutes on each side. *Please note, chicken will not be fully cooked at this point.
  4. Place the chicken in a 9x13 baking dish.
  5. Cover the chicken with the marinara sauce.
  6. Place in the oven at 350 for about 25-30 minutes. During the last 5 minutes of cooking, sprinkle the Parmesan cheese over the chicken.
  7. While the chicken is in the oven, cook the Penne noodles.
  8. Serve the chicken over the noodles.

 

Marinara Sauce Recipe

My hubby knows I love Mozzarella Sticks, so he brought me home some from the store. I have never figured out why they never put marinara sauce in those packages. You simply can’t have one without the other in my opinion. So I made it my quest to create a yummy marinara sauce to go with them.

Marinara SauceI made this Marinara Sauce in the crock pot and I made enough to freeze for future use. This sauce will also make a great spaghetti sauce and makes excellent Chicken Parmesan.

Ingredients
  • 2 tablespoons of dried onions
  • 1 tablespoon chopped garlic
  • 4 - 28 oz cans of crushed tomatoes
  • 1 cup of water
  • 1 tablespoon of salt
  • 2 tablespoons dried basil
  • 1 tablespoon of dried parsley
  • 1 tablespoon crushed red pepper
  • 1 tablespoon of garlic powder
  • 3 tablespoons of Italian seasoning
Instructions
  1. In a crock pot (5 quart or larger) add all ingredients and cook on low for 4-5 hours. Adjust seasonings to your taste.

The pumpkins are ripe for the picking and the weather is changing. It’s time for all things Fall! I love pumpkin recipes during this time of year. This time I was craving Chocolate and I was wanting something in cupcake form.

  • 2½ cups of flour
  • 1½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ¼ teaspoon ginger
  • 1½ baking powder
  • ½ teaspoon salt
  • 1½ cups of sugar
  • ⅔ cup vegetable oil
  • ½ cup milk
  • ½ tablespoon vinegar
  • 1 15 oz can of pumpkin
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 or 2 tubs of cream cheese frosting (if you desire)
Instructions
  1. In a medium bowl, whisk together the flour, cinnamon, cloves, nutmeg, ginger, baking soda, baking powder, and salt until well blended.
  2. In a large bowl mix together the milk and vinegar. Beat in vegetable oil, sugar, pumpkin, eggs, and vanilla at low speed until combined.
  3. Gradually add in the dry mixture. Continue to until it is all combined.
  4. Fold in the chocolate chips.
  5. Fill the paper liners about ⅔ full. Bake at 350 degrees for 18 minutes.
  6. Once the cupcakes are cool, add the cream cheese frosting.

Chicken and Rice Burritos Recipe

I am always trying to figure out a different way to make chicken in dishes. I have come up with a very easy way to make chicken and rice burritos.

I just love Mexican style food. It is so full of flavor. The Spanish rice is the key to this meal.

Ingredients
  • 1 Large Chicken Breast, cooked and shredded
  • 1- 5.6 oz package of Spanish Rice, prepared as directed
  • 8 oz of shredded Cheddar Cheese
  • 10 Whole Wheat Tortilla Wraps
Instructions
  1. Mix the shredded chicken and the prepared Spanish rice in a bowl.
  2. Spoon a bit of the mixture into a tortilla, add a pinch or two of cheese, then wrap your burrito and place it in a greased 9x13 pan. Repeat until all tortillas are full or until you run out of mixture.
  3. Top with the remaining cheese.
  4. Place in the oven at 350 for 10 min.
